Officially, you can “change your Zanpakuto's appearance and fighting style as you like.” Launch coverage (Noisy Pixel, Oct 23, 2026) lists the parts you can change:

The launch posts don't say whether fighting style changes affect your Action Cards or stats. We'll document it once it has been checked in-game.
